Even i who like to cook alot, resort to easy food at times when i am busy. I often miss my simple delicious homemade hotdogs that i occasionally have for lunch. So i increased the protein and dropped the fat % to bring you a ridiculously easy and tasty option on the run that is less processed and lower glycemic.
With my hotdog’s i use good continental frankfurters with spelt bread, fried onion, mustard and some ketchup. To change it up a bit i created a simple version done with BBQ’d Smoked Chicken thigh and relish instead of ketchup. You can use other chicken of course but i am always prepared with BBQ chicken in the fridge.
The recipe speaks for itself i think… all bar the relish maybe, which is Gherkin. I am pretty sure most people can find this and some American mustard to do the trick. Carbs/sugars wise its not too bad as you don’t use alot of condiments. Maybe 10ml of relish and 10ml of mustard adding about 4 grams of carbs. No exactly healthy but hardly bad in this quantity. The spelt is light and about 10 grams of carbs – it is much lower glycemic than most breads. I am also wheat allergic which i think is a good thing, so spelt is great for me.
All up, this humble hotdog substitute is about 260 calories. This depends on your thigh meat of course and mine is about 100 grams in weight. It’s a boys version and i am sure the girls can do something a little lighter. I BBQ my chicken on the weber directly over the coals with wood chips. So they do shrink somewhat and are lower in fat than most grilled or fried thighs. There is about 28 grams of protein and 10 grams of fat in this baby, so its a surprisingly good balance for what i deem naughty food.
