I texted my wife tonight and asked what she wanted to eat for dinner knowing we booked a night out tomorrow. Eggs! came in via text, so back to the old dinner favourite which i posted last week. The Omelette!
This time the recipe has a nut twist and a veggie blast. I had been doing a lot of research on all sorts of diets and watching a lot of documentaries to get myself up to par with the latest dietary thinking. So here you have my idea of a Paleo Omelette. It may not be strict but it’s close. As some of you know i don’t spell out recipes so here is the quick run down for you below. I tried almonds with lots of veggies this time because i wanted to avoid a piece of spelt bread which i often have with it. As some of you may know, Paleo means no bread!
Fry a large spring onion with 5 ml oil and add half a large tomato sliced into 5 segments. Let it gain some heat and flip about. (i don’t use any utensils, i’m flash). Cut-side up, place (wooo, no throwing) about 5-6 brussel sprouts and sprinkle some Massel Chicken stock on them. Massel is a great product although it might not be Paleo, it’s my cheat seasoning. No salt in this, you simply don’t need it.
Then throw in 3 mushrooms sliced chunky and sprinkle them with about 20 ml of wheat free Tamari. Again flip for a minute or so on high heat. Throw in about 50 grams of sliced cooked chicken and pull aside so it doesn’t burn while you whip up three eggs. Pour eggs in, move about evenly and push down any onion or pieces climbing up the pan so it’s looking neat and tidy. Shove back on the heat for about a minute and then pop under the already heating grill for about 2 mins – then throw about 10 almonds in before it hardens too much. Grill for another 5 or so till brown. I like my omelette with a browning effect on it. The colours are just glorious!
Calories? About 450-490 depending on what chicken you use and the size of your veggies and it falls just shy of 50 grams of protein. My wife’s omelette i made in parallel with a smaller pan and 2 eggs. I added a little less ingredients and this ended up at aprox 350 calories and 35 grams of protein.
You don’t need to use these veggies, try other things and get playing with the humble egg.
